The reason for this was that in those days, water wasn’t always safe to drink, thereby leaving ale as the most suitable and safe alternative. Ale inspectors needed to be able to easily identify pubs to ensure their beverages were of suitable quality.
As cities became larger and housed more competing businesses, shop signage became more and more popular. Many of these signs would have images on with no words, as most patrons would have been illiterate. This is why a lot of English pubs nowadays are called things like ‘The Black Horse’ – because the image on their sign back in ancient times would have been a black horse.
